- Submit high school transcripts and verification of FOODSAFE Level 1
- Cohorts start multiple times throughout the year (Fall, Winter, Spring)
- Purchase mandatory chef uniform, commercial culinary tool kit, and slip-resistant footwear

- Classical knife skills, stocks, mother sauces, butchery, and garde manger
- Line cooking stations: sautΓ©, grill, banquet prep, and dining room lunch service
- Menu costing, kitchen mathematics, sanitization, and nutritional principles
- Counts as 600 work-based training hours and Level 1 technical training credit toward Red Seal Cook
